basic sponge cake
basic genoise (sponge cake)
ingredients:
(1-1/2) cup cake flour or all purpose flour
(1) cup sugar
(5) Tbsp. unsalted butter
(1/2) cup milk
(1/2) tsp. salt
(6) eggs
direction:
1. preheat the oven at 325°f.
2. in two separate mixing bowls, separate yolks from whites of (6) eggs.
3. boil water in a pot for a double boiler. turn off the heat and place the mixing bowl with egg yolks over the pot. add (1/2) cup sugar and whisk until pale yellow. set aside.
4. make meringue: whisk egg whites and slowly add (1/2) cup sugar after soft peaks form. continue whisking until firm peaks form.
5. fold in 1/2 of meringue into the yolk+sugar mixture.
6. fold in sifted (1-1/2) cup flour and (1/2) tsp. salt into the meringue+yolk+sugar mixture.
7. add (5) Tbsp. melted unsalted butter and (1/2) cup milk to the batter. mix well.
7. fold in remaining 1/2 of meringue into the batter.
9. line 9" round cake pan with parchment paper and pour the batter into it.
10. tap the pan a few times on the countertop to remove air bubbles, and smooth the top with a spatula.
11. bake in the oven for 55-60 min. until light golden brown and the toothpick comes out clean when inserted in the center of the cake.
12. cool on a wire rack upside down.
