fried plantain rolls

turon is a filipino dessert made of plantain and sugar wrapped in egg roll wrapper and fried. i was introduced to this sweet goodness by one of my filipino friends, angie. this recipe is from angie, but i used vietnamese spring roll rice papers instead of egg roll wrappers which the original recipe calls for.  

fried plantain rolls (turon)

ingredients:
(1) large plantain
(8) 9" dia. spring roll rice paper or egg roll wrappers
(4) Tbsp. granulated sugar
(1) Tbsp. confectioners sugar
(1) tsp. cinnamon powder (optional)
water
cooking oil

direction:
1. place (1) large plantain in a microwave oven and pre-cook for about 1 min.
- this is an extra step i added to the original recipe. it takes a bit too long to cook plantain by frying, and i often burned wrappers before plantain is cooked! 
2. cut plantain into approx. (8) 3"-4" sticks.
3. soak spring roll rice paper in luke warm water for about 5 seconds (or per package instruction) and place on a work surface and wait until pliable.
- if you are using egg roll wrappers, skip this step!
4. place one plantain stick in the middle of spring roll rice paper and sprinkle (1-1/2) Tbsp. sugar on it.
5. carefully fold rice paper (see photos) and lightly coat the outside with cooking oil to prevent from sticking to plate/work surface.
- if you are using egg roll wrappers, use water to seal well and no need to coat the outside with oil.
6. heat oil (approx. 1/2" deep) in a pan on medium high heat. to test if the oil is ready, insert the tip of a chopstick and if bubbles form around it, it is ready.
7. carefully drop in plantain sugar rolls and make sure there is enough gap between each roll, so they don't stick to each other.
8. fry until the skin crisp up and the sugar starts to caramelize inside.
9. remove and drain rolls on a wire rack and lightly sprinkle with confectioners sugar and cinnamon powder.
10. serve while hot.
