it's been a little over a month and my lemon confit and lemon syrup are ready. there is no further step required for lemon syrup, and you can use it to make lemon tea or add to soy sauce to make citrus dipping sauce. for lemon confit, there are a few more steps left before you can use it and here is how.
sugar has completely dissolved and lemon syrup is ready.
make lemon tea with lemon syrup:
add 1 tsp lemon syrup and 2 slices of lemon in 1/2 cup of hot water.
make lemon soy dipping sauce with lemon syrup:
mix 2 tsp soy sauce, 2 tsp lemon syrup and 1 tsp water.
now lemon confit!
take one lemon quarter out of the jar.
rinse off salt under running water.
with a sharp knife, slice out lemon flesh and pith and discard them. use only the lemon peel.
in a boiling water, blanch the peel for 20 seconds.
mince the peel and sprinkle small amount over salad or pasta.
