soy braised burdock root

burdock root is an earthy and healthy root vegetable and a popular ingredient in korean and japanese cooking. soy braised burdock root is one of my comfort foods my mom cooks all the time. i learned this recipe by watching my mom (and of course, she eyeballs everything), but i tried to quantify the ingredients here. 

soy braised burdock root

ingredients:
(3) burdock roots
(1) Tbsp. olive oil
(3) Tbsp. soy sauce
(3) Tbsp. water
(3) Tbsp. honey
- you can use an equal amount of sugar or malt syrup, but my mom always uses honey.
(1) Tbsp. sesame oil
(1) tsp. sesame seeds

direction:
1. using a vegetable peeler, peel the skin of (3) burdock roots, rinse and slice them on the bias at about 1/8" thick.
- peeling is optional.
- peeled and cut burdock roots will discolor and turn brown, but it is perfectly okay.
- it is not necessary for this recipe, but if you want to prevent them from discoloring, you can soak them in a bowl of water with a few drops of vinegar.
- (3) burdock roots yield about (5) cups.

2. heat a wok or pan on high heat and add (1) Tbsp. olive oil and burdock slices and stir fry for about 3 min.
3. add (3) Tbsp. soy sauce, (3) Tbsp. water, (3) Tbsp. honey and stir well.
4. lower the heat to a simmer and cook until about half of the liquid remains. stir occasionally.
5. turn off the heat and add (1) Tbsp. sesame oil and sprinkle (1) tsp. sesame seeds.
6. serve with a bowl of rice.

yield: (4) cups
