classic popover with honey and goat cheese filling.
honey goat cheese popovers
ingredients:
basic popover:
(1) cup all purpose flour
(1) cup whole milk @ room temp.
(2) Tbsp. melted butter + extra softened butter for greasing
(2) eggs @ room temp.
(1/2) teaspoon salt
- i've researched many popover recipes, and this seems to be the magic ratio for almost all of them. flour : milk : butter : egg = 1 : 1 : 2 : 2. popovers come out light and chewy, and it works for me!
filling:
(1) oz. plain goat cheese
(2) tsp. honey
- be creative with flavors; cheddar, brie, herbs, cinnamon sugar, fruits etc.
direction:
1. preheat the oven at 400° f.
2. grease each cup of popover pan (or muffin pan) with softened butter.
3. in a bowl, whisk (2) eggs, (1) cup whole milk, (1/2) teaspoon and (2) Tbsp. melted butter and sift in (1) cup all purpose flour. transfer the batter into a pitcher for easy pouring.
- make sure eggs and milk are luke warm at room temp. i've tested one recipe which calls for the batter to be refrigerated before baking, and it failed miserably! they don't pop up!
4. in a small bowl, mix (1) oz. plain goat cheese and (2) tsp. honey. divide into 24 equal portions and set aside.
5. preheat greased popover pan in the oven for 3-5 min.
6. pour the batter into preheated popover pan, filling each cup about 1/2 full. drop goat cheese/honey mixture in the middle.
7. bake in the oven for about 25-30 min. or until golden brown.
